It was around the age of 24 that I began my culinary journey in Monaco. The various experiences I gained in palaces, Michelin-starred restaurants, and brasseries didn't succeed in making me forget my favorite profession: pastry. I define my pastry as simple and modern with readable flavors that call to mind childhood memories.
